What is this Fathead Dough All About

We’re here today in the Clucking It Up Kitchen to figure out what is this fathead dough all about.

We’ve actually been using it nearly all this month. It’s made crackers (similar to “cheez-its”), hot pockets, pizza crust, pigs in a blanket, even little slider rolls. We plan on using it for tortillas on smothered green chili burritos, pizza pinwheels and even pot pie!

So…where does it come from? Who made it first? Well, ladies and gentlemen the brain trust behind this creation is……(I know the suspense is killing you!)

For anyone who doesn’t know, Fat Head pizza was created by Tom Naughton’s oldest brother’s oldest son. Ever since it has been named in honour of his Fat Head Movie . Fat Head is a comedy-documentary by Tom Naughton (comedian and former health writer). The documentary explains how low cholesterol is unhealthy, saturated fat does not cause heart disease but instead sugars, grains, starches and processed vegetable oils do.

You get the idea right…so what is this fathead dough all about? It appears to me to be the best option for all of us low “carbers”, Low Carb High Fatters, Atkins Dieters, Gluten Free friends. Is it the end all cure all?? I highly doubt it. I do, however, believe that you are free to make your own choices as to what you feed your face!

I’m sharing with you the basic dough recipe – you can do with it whatever you want really. So, what is this fathead dough all about…yummy goodness for you belly!

Basic Fathead Dough
Delicious alternative to dough made with regular flour and making it low carb and gluten free

Ingredients
  1. 170 g pre shredded/grated mozzarella cheese
  2. 85 g almond meal/flour
  3. 2 tbsp cream cheese
  4. 1 egg
  5. pinch salt to taste
Instructions
  1. Mix the shredded cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
  2. Stir then microwave on HIGH for another 30 seconds.
  3. Add the egg, salt, and any other flavorings (depending what the end result of your dough is), mix gently.
  4. Place in between 2 pieces of baking parchment/paper and roll into whatever shape you are making. Remove the top baking paper/parchment.
  5. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
Notes
  1. *Pizza, bake at 425* for 12-15 minutes, flip over and bake another 10 minutes or so (until you get the crust you like) top with cooked/prepared toppings. Bake for another 5-7 minutes.
  2. *Pigs in a Blanket bake at 425* for 14-17 minutes or until golden brown
  3. *Hot Pockets fill rounds of dough with eggs, bacon, sausage, ham, pepperoni, etc., fold in half and seal. Prick top with fork for steam holes. Bake at 425* for 15-17 minutes or until golden brown.
