It’s the age old question – “What to have for dinner?”. It seems it’s the question daily at our house.

Going on with our quest on what to have for dinner. I struggle with this sometimes. Mostly because I LOVE food (really, who doesn’t?), partially because we’re vegetarians (and we get tired of beans for protein) and well, it’s hard sometimes to come up with a good meal everyday. The struggle is real guys!
We had been planning a camping trip on the Kaibab Plateau for the weekend – might as well test a few camping ideas. For those of you that don’t know what or where the Kaibab Plateau is….well, it’s the North Rim of the Grand Canyon. Yeah, that’s our backyard. Be jealous right now.
Alright, on to what to have for dinner…..
Geez I get so sidetracked sometimes.
I had some Yukon gold potatoes, and some Field Roast Sausage, peppers from the neighbors garden . Hmmm what can I do with this – EUREKA a moment of brilliance right here. What about those tin foil packet dinners?! Awww yes! Easy, almost no clean up and yummy deliciousness.
Here’s the deal, you chop up all of this stuff, throw it in a bowl with some olive oil and some seasonings, them put a big old pile of it in some tin foil and then bake it. Can it be much easier? Seriously?
- 8 half ears of corn
- 8-10 yukon gold potatoes cut into chunks
- Olive oil
- 6 links of Field Roast Sausage (for meat eaters - use whatever sausage you like)
- 1 medium sized onion cut into chunks
- 2 bell pepers cut into chunks
- Tony Chachere's Cajun Seasoning
- Preheat oven to 425 degrees.
- Chop all veggies (except corn cobbettes) into bite sized chunks. Slice sausage into rounds. All sausage, veggies and corn to a LARGE bowl drizzle with enough olive oil to coat add seasoning to taste (we like a LOT). I probably added close to 2 tablespoons.
- Lay out 8 pieces of heavy duty tin foil. Scoop mixture onto foil and seal up.
- Place "packages" onto a cookie sheet and bake for 30 minutes or until potatoes are tender.
- Can also be cooked in the campfire - just position packages around the fire on some coals. Cook until potatoes are tender. Can also be cooked on a BBQ grill - cook until potatoes are tender.
